Ingredients
  

For the cookies

  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 box strawberry cake mix
  • 2 teaspoons baking powder
  • 1/2 cup strawberries, chopped Fresh strawberries should be finely chopped.

For the frosting

  • 8 ounces cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 4 tablespoons unsalted butter, softened Ensure it's at room temperature for easy mixing.
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • 6 strawberries (for topping) Fresh strawberries for garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the eggs, vegetable oil, cake mix, baking powder, and chopped strawberries until well blended.
  • Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Let the cookies cool completely.

Frosting Preparation

  • Beat the cream cheese and butter together until smooth.
  • Add vanilla and powdered sugar, mixing until well combined.
  • Spread the frosting over the cooled cookies and top with fresh strawberries.

Notes

Store leftover cookies in an airtight container in the refrigerator for up to one week or freeze without frosting for up to three months. For extra flavor, consider adding strawberry extract to the frosting or chocolate chips to the dough.
