For The Cream Cheese Filling

  • 6 ounces cream cheese, softened
  • 1/3 cup powdered sugar

For The Strawberry Cookie Dough

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup salted sweet cream butter, softened
  • 2/3 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon strawberry extract
  • 1 large egg + 1 egg white, room temperature
  • 1 cup capped, cored, and finely chopped fresh strawberries
  • 1 tablespoon all-purpose flour For sprinkling on strawberries

For Cream Cheese Frosted Cookies

  • 2 large eggs room temperature
  • 1/4 cup vegetable oil
  • 1 box strawberry cake mix
  • 2 teaspoons baking powder
  • 1/2 cup chopped strawberries
  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 slices fresh strawberries

For Cake Mix Cookies

  • 1 box strawberry cake mix (15.25 ounces)
  • 1/2 cup vegetable oil
  • 2 eggs room temperature
  • 1 cup white chocolate chips

For Pudding Cookies

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 3 tablespoons strawberry-flavored instant jello gelatin powder
  • 2 large eggs room temperature
  • 1 teaspoon strawberry extract
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 box cheesecake-flavored instant pudding mix (3.4 ounces)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 bag white chocolate chips (12-ounce)

Instructions
 

Preparation

  • Make the Cream Cheese Filling by beating together the cream cheese with powdered sugar until smooth. Set aside.
  • For the Strawberry Cookie Dough, mix the flour, baking powder, and baking soda in a large bowl.
  • In another bowl, cream the softened butter with granulated sugar and brown sugar. Add the vanilla extract, strawberry extract, the egg, and egg white. Mix until well combined.
  • Slowly add the dry ingredients to the wet ingredients, mixing until combined.
  • Carefully fold in the chopped strawberries and sprinkle with 1 tablespoon of flour.
  • Chill the dough in the fridge for at least 30 minutes.

Baking

  • Scoop out some dough, add a small spoonful of the cream cheese filling in the center, and cover it with more dough.
  • Bake at 350°F (175°C) for 10-12 minutes.

Frosting

  • For Cream Cheese Frosted Cookies, mix together the eggs, vegetable oil, and cake mix. Add baking powder and chopped strawberries, and bake.
  • Top with cream cheese frosting made with cream cheese, butter, powdered sugar, and vanilla extract.

Variations

  • For Cake Mix Cookies, mix the cake mix with oil and eggs, fold in white chocolate chips, and bake as directed.
  • For Pudding Cookies, cream together the butter and sugar, add the strawberry gelatin, eggs, extracts, flour, pudding mix, and baking powder. Stir in white chocolate chips and bake.

Notes

Serve warm or at room temperature. Store in an airtight container at room temperature for 3-5 days or refrigerate for up to a week. Use fresh strawberries for the best flavor. You can add nuts or white chocolate chips for a flavor twist.
