Ingredients
  

For the Filling
  • 4 ounces cream cheese, softened Make sure it's at room temperature for easy mixing.
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch For coating the strawberries.
  • 1 egg beaten (for egg wash)
  • Powdered sugar for dusting (optional) Can be added after baking.
For the Turnovers
  • 1 sheet puff pastry, thawed Ensure thoroughly thawed for best results.
  • 1 cup fresh strawberries, chopped Feel free to swap for other fruits if desired.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy.
  3. In a separate bowl, toss the chopped strawberries with cornstarch until well-coated.
  4. On a lightly floured surface, roll out the puff pastry sheet and cut it into 4 equal squares.
Assembly
  1. Place a spoonful of the cream cheese mixture in the center of each square.
  2. Top with a spoonful of the coated strawberries.
  3. Fold each pastry square over to form triangles, pressing the edges firmly with a fork to seal them.
  4. Brush the tops with beaten egg for a golden finish.
Baking
  1. Arrange the turnovers on a baking sheet lined with parchment paper.
  2. Bake for 18-20 minutes, or until they are puffed and golden brown.
  3. Allow them to cool slightly before dusting with powdered sugar, if desired.

Notes

These turnovers are delightful on their own but can be served with vanilla ice cream or whipped cream for an elevated treat. For storing, keep in an airtight container at room temperature for up to 2 days, or refrigerate for 4-5 days. They can also be frozen for up to 3 months.
