  • ½ tsp Baking soda
  • 2 cups Flour Can use gluten-free flour for a gluten-free option.
  • 1 tsp Vanilla extract
  • ½ cup Brown sugar
  • ½ cup Butter, softened
  • 2 Eggs

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the butter, brown sugar, and sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing well.
  • In another bowl, whisk together the flour, baking powder, baking soda, and a pinch of salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the cream cheese, powdered sugar, and chopped strawberries until fully incorporated.
  • Drop spoonfuls of dough onto a lined baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool before serving.

Notes

Store the cookies in an airtight container at room temperature for up to 5 days. You can refrigerate them for up to a week or freeze for up to three months. Don't overmix the dough to keep cookies tender.
