Ingredients
  

For the dough

  • 1 cup Butter softened
  • 1/2 cup Brown sugar
  • 1/2 cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups Flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda

For the filling

  • 8 ounces Cream cheese softened
  • 1/2 cup Powdered sugar
  • 1 cup Strawberries diced

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, beat together the butter, brown sugar, and sugar until creamy.
  • Add the eggs and vanilla extract, mixing until well combined.
  • In another bowl, whisk together flour, baking powder, and baking soda.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the cream cheese and strawberry pieces.

Baking

  • Drop spoonfuls of dough onto a lined baking sheet.
  • Bake for 12-15 minutes or until lightly golden.
  • Allow to cool before serving.

Notes

Store the cookies in an airtight container for freshness. They can last at room temperature for a few days or in the refrigerator for up to a week. Freeze for up to three months separated by parchment paper.
