  • 1 cup Strawberries, chopped Use fresh strawberries for the best flavor.
  • 8 oz Cream cheese, softened If not available, mascarpone can be used as a substitute.
  • 1 cup Powdered sugar
  • 1/2 cup Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 cups Flour
  • 2 tsp Vanilla extract
  • 1/2 cup Brown sugar
  • 1/2 cup Butter, softened
  • 2 large Eggs

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter, brown sugar, and sugar until smooth.
  • Add in the eggs and vanilla extract, mixing well.
  • In another bowl, combine the flour, baking powder, baking soda, and a pinch of salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the cream cheese and chopped strawberries gently.
  • Drop tablespoon-sized amounts of dough onto a lined baking sheet.
  • Bake for 12-15 minutes or until golden.
  • Let them cool and enjoy your delicious strawberry cheesecake cookies!

Notes

Serve warm or at room temperature. Great by themselves or with vanilla ice cream. Store in an airtight container for up to 5 days, or freeze for up to 3 months.
