  • 4 heads baby bok choy, halved lengthwise
  • 1 tablespoon vegetable oil or sesame oil Use sesame oil for more flavor.
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce (optional) Omit for a vegan version.
  • 1/2 teaspoon sugar or honey Sugar can be used for a vegan dish.
  • 1 tablespoon water
  • Pinch of red pepper flakes (optional)
  • Toasted sesame seeds, for garnish

Cooking Instructions

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add minced garlic and sauté for 30 seconds until it becomes fragrant.
  • Place baby bok choy cut-side down in the skillet. Let it sear without stirring for 1–2 minutes.
  • Pour in the soy sauce, oyster sauce (if using), sugar, water, and red pepper flakes. Toss to coat evenly.
  • Stir-fry for 3–4 more minutes until the bok choy is just tender but still crisp, and the sauce is slightly reduced.
  • Transfer the stir-fried bok choy to a serving plate and sprinkle with toasted sesame seeds before serving.

Notes

Make sure to not overcook the bok choy; you want it to be tender but still crunchy. Feel free to adjust the amount of garlic or soy sauce for taste. For extra flavor, sprinkle chopped green onions or sliced chili on top before serving. This dish can also be served over rice or noodles.
