  • 1 pound skirt steak, diced into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 4 pieces flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 piece onion, sliced
  • Salt and pepper to taste

Method
 

Cooking
  1. Heat the vegetable oil in a skillet over medium-high heat.
  2. Season the steak with salt and pepper and cook in the skillet until browned.
  3. Add sliced onions and cook until they are soft.
  4. Place a tortilla in another skillet or on a griddle, sprinkle half with cheese, add the steak and onions, then top with more cheese.
  5. Fold the tortilla in half and cook until crispy and golden brown on both sides.
  6. Repeat with remaining tortillas and filling.
  7. Slice and serve hot.

Notes

Serve with fresh salsa, sour cream, or guacamole. Pair with a simple salad drizzled with lime juice. For storage, keep in an airtight container in the refrigerator for up to three days, or freeze for up to two months.
