  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup brown sugar (light or dark, tightly packed)
  • 1/4 cup granulated sugar
  • 1 package instant vanilla pudding mix (3.4 ounces)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon flaked sea salt
  • 12 ounces semisweet chocolate chips

Preparation

  • Preheat your oven to 350 degrees F (180 C). Prepare your baking sheets by lining them with parchment or silicone mats, if you like, and set aside.
  • In a mixing bowl, use an electric mixer or a rubber spatula to cream together the butter, brown sugar, and white sugar until well-blended.
  • Beat in the instant pudding mix, then add the eggs and vanilla extract. Scrape down the sides of the bowl and mix until the mixture is mostly even.
  • Sprinkle the flour, baking soda, and salt over the mixture. Mix just until incorporated, then stir in the chocolate chips by hand.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheets.
  • Bake in the oven for 10-12 minutes until the tops are lightly golden.
  • Let the cookies cool on the baking sheets for 5-10 minutes, then move them to a wire rack to cool completely.

Notes

These cookies will stay fresh in an airtight container at room temperature for at least 3-4 days. They are great on their own or served warm with milk or ice cream.
