Pie Crust

  • 1 9-inch 9-inch pie crust, store-bought or homemade

Filling

  • 5 ounces fresh spinach, wilted and squeezed dry
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • pinch nutmeg (optional)

Instructions
 

Preparation

  • Preheat the oven to 375°F. Place the rack in the center.
  • Sauté onions in a skillet until soft, then add garlic and spinach. Cook until wilted and set aside to cool.
  • Roll out the pie crust in a 9-inch pie dish. Prick the bottom with a fork, line with parchment and weights, and bake for 10 minutes.
  • Remove weights and bake for 5 more minutes. Let cool.

Baking

  • In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg.
  • Stir in the sautéed spinach mixture and shredded cheese.
  • Pour filling into the prepared crust and bake for 35–40 minutes, or until the center is set and the top is golden.
  • Let rest for 10–15 minutes before slicing and serving.

Notes

For a crispier crust, ensure your pie crust is cold before baking. Experiment with different cheeses like feta or goat cheese for a new flavor. Consider adding other vegetables such as mushrooms or bell peppers to enhance the filling. Always sauté veggies before adding to the egg mixture to avoid excess moisture. Allow the quiche to rest before slicing to help it set properly.
