  • 1 sheet puff pastry Thawed if frozen
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese
  • 1/4 cup dried cranberries, chopped
  • 1 large egg, beaten For egg wash
  • to taste salt and pepper
  • as needed flour for dusting Use as needed for rolling out pastry

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface until thin.
  3. Cut the pastry into triangles.
  4. In a bowl, mix together the chopped spinach, feta cheese, dried cranberries, salt, and pepper.
  5. Place a spoonful of the mixture at the base of each triangle.
  6. Fold the edges of the triangles towards the center to shape them like trees.
  7. Brush the tops with the beaten egg for a beautiful golden finish.
  8. Bake for 15-20 minutes or until they are puffed and golden brown.
  9. Serve warm, and enjoy the festive flavors!

Notes

Best served warm right from the oven. Can be garnished with fresh herbs or pomegranate seeds.
