  • 3 large eggs, beaten
  • 2 cups cottage cheese
  • 10 ounce package frozen chopped spinach, thawed and very well drained Ensure spinach is well drained to avoid watery casserole.
  • 1/3 cup crumbled feta cheese Use high-quality feta for richer flavor.
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash nutmeg

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 1½-quart (9-inch square) casserole dish thoroughly.
  2. In a large bowl, mix together the beaten eggs, cottage cheese, well-drained chopped spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg until evenly blended.
  3. Pour the mixture into the prepared casserole dish and spread it evenly.
Baking
  1. Place the dish uncovered in the preheated oven and bake for 40-45 minutes, or until the center is nearly set and the edges are lightly golden.
  2. Allow the casserole to cool for 5-10 minutes before cutting into portions and serving.

Notes

This casserole can be served as a main dish or paired with a green salad, roasted vegetables, or quinoa. Drizzle balsamic glaze for extra flavor. Store leftovers in an airtight container in the refrigerator for up to three days or freeze portions for up to three months.
