  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash nutmeg

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 1½-quart (9-inch square) casserole dish thoroughly and set aside.
  • In a large bowl, mix together the beaten eggs, cottage cheese, well-drained chopped spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg until evenly blended.
  • Pour the mixture into the prepared casserole dish, spreading it evenly.

Baking

  • Place the dish uncovered in the preheated oven and bake for 40-45 minutes, or until the center is nearly set and the edges are lightly golden.
  • Allow the casserole to cool for 5-10 minutes before cutting into portions, serving, and enjoying.
