Ingredients
  

Noodles and Sauce

  • 8 oz noodles (spaghetti or rice noodles) Use your preferred noodles.
  • 1/2 cup peanut butter Smooth or crunchy as per preference.
  • 1/4 cup soy sauce Use gluten-free soy sauce if needed.
  • 2 tablespoons honey or sugar Maple syrup can be used for vegan version.
  • 1 tablespoon sesame oil Optional, for added flavor.
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon chili flakes or sauce Adjust according to desired spice level.
  • to taste green onions and peanuts for garnish

Instructions
 

Preparation

  • Cook the noodles according to package instructions. Drain and set aside.
  • In a bowl, mix together peanut butter, soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and chili flakes until smooth.

Combining

  • In a large bowl, combine the cooked noodles with the peanut sauce, tossing to coat evenly.
  • Serve warm, garnished with chopped green onions and peanuts.

Notes

Can be served warm or cold, perfect for main or side dish. To store leftovers, place them in an airtight container in the refrigerator; they will stay fresh for up to 3 days.
