Main Ingredients

  • 2 medium medium cucumbers, sliced Choose firm cucumbers for best texture.
  • 1 tsp salt
  • 1 tbsp rice vinegar
  • 1 tbsp Korean pepper flakes Adjust for desired spice level.
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1 clove garlic, minced
  • 1 tsp sugar
  • 1/4 tsp black pepper

Preparation

  • Mix the sauce ingredients (rice vinegar, Korean pepper flakes, sesame oil, sesame seeds, garlic, sugar, black pepper) in a bowl and set aside.
  • Wash and slice the cucumbers, then sprinkle with salt and let soak for 30 minutes.
  • After 30 minutes, wash the cucumbers under cold water for about 30 seconds and place them in a large bowl.
  • Pour the sauce over the cucumbers and mix well until everything is thoroughly combined.
  • Serve and enjoy!

Notes

For best results, store leftovers in an airtight container in the refrigerator for 2-3 days. The salad is best enjoyed cold and does not freeze well. Stir before serving to re-mix the flavors.
