  • 1 cup cooked rice Use leftover rice for best results.
  • 1 can tomato sauce
  • 1 pound ground beef
  • 1 cup bell peppers, chopped Any color bell pepper can be used.
  • 1/2 cup onions, chopped
  • Salt and pepper to taste
  • Seasonings (such as paprika, cumin, and garlic powder) Feel free to customize the seasonings.

  • In a large skillet, brown the ground beef over medium heat.
  • Add the chopped onions and bell peppers, cooking until softened.
  • Stir in the cooked rice and tomato sauce.
  • Season with salt, pepper, and other seasonings to taste.
  • Cook until heated through, stirring occasionally.
  • Serve warm.

Notes

Storage: Allow to cool completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove. For a vegetarian version, substitute ground beef with black beans or lentils. Adjust spice level by adding seasoning or jalapeƱos.
