  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1/2 cup diced red bell pepper Feel free to add other veggies like avocados or lettuce.
  • 1/2 cup diced onion
  • 1/2 cup salsa Adjust amount to taste.
  • 1 teaspoon chili powder Adjust to taste.
  • 4 large flour tortillas Whole wheat tortillas can be used for a healthier version.
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro (optional, for garnish)

Preparation

  • In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, onion, salsa, and chili powder. Mix well.
  • Lay out the flour tortillas on a clean surface.
  • Spoon a portion of the chicken mixture onto each tortilla, sprinkle with shredded cheese, and add cilantro if desired.
  • Roll up the tortillas tightly, folding in the sides as you go.
  • Slice in half, if desired, and serve immediately. Enjoy your Southwest Chicken Wraps!

Notes
