  • 1 medium onion, diced
  • 1 piece green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups diced tomatoes (fresh or canned)
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, bell pepper, and minced garlic; sauté until soft.
  3. Stir in the okra and cook for a few minutes.
  4. Add the diced tomatoes, vegetable broth, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20-30 minutes until the okra is tender.
  6. Serve hot.

Notes

Serve with cornbread and a fresh salad. Top with sour cream or parsley for added flavor. Store leftovers for up to 4 days in the refrigerator or freeze for up to 3 months.
