  • 1 tsp Vanilla extract Almond extract can add depth.
  • ½ cup Milk (whole or substitute) Almond milk or oat milk can be used.

Crust Ingredients

  • 1 cup Flour (for a flaky crust) Gluten-free flour mixes are available.
  • 1 tsp Baking powder Helps with rising; none needed if unavailable.
  • ½ tsp Salt Sea salt can be used for a richer flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and cube the sweet potatoes, then boil until tender (about 15-20 minutes). Drain and mash until smooth.

Mix the Filling

  • In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, butter, cinnamon, nutmeg, vanilla extract, milk, and salt. Blend until creamy and all ingredients are well-incorporated.

Make the Crust

  • In another bowl, whisk together the flour, baking powder, and remaining salt.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Gradually add milk, stirring until a soft dough forms.

Assemble Your Cobbler

  • Pour the sweet potato mixture into a greased 9x13-inch baking dish.
  • Drop spoonfuls of the dough over the filling. It doesn’t have to cover everything; it gives that rustic cobbler look!

Bake

  • Place in the preheated oven and bake for approximately 25-30 minutes, or until the crust is golden brown and the filling is bubbly.

Serve

  • Let it cool slightly before serving. Pair it warm with a scoop of vanilla ice cream or a sprinkle of chopped pecans for that extra crunch.
