Ingredients
  

Peach Filling

  • 4 cups fresh peaches, sliced Use ripe peaches for best flavor.
  • 1 cup sugar Divided, 1/2 cup for filling and remaining for batter.
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, vanilla extract, and lemon juice.
  • Pour the peach mixture into a greased baking dish.

Batter Preparation

  • In another bowl, mix the flour, remaining sugar, baking powder, and salt.
  • Add the milk and melted butter to the dry ingredients and stir until combined.

Baking

  • Pour the batter over the peaches in the baking dish.
  • Bake for 40-45 minutes or until golden brown.

Serving

  • Serve warm, optionally with ice cream or whipped cream.

Notes

To store, cover and refrigerate for 3-4 days or freeze for up to 2 months. Adjust sugar based on peach sweetness. You may also try adding oats or crushed nuts for added crunch. Nutmeg or cloves can be added for extra flavor.
