Ingredients

  • 6 cups Fresh peaches Canned peaches can be used, ensure they are drained.
  • ½ cups Granulated sugar Use brown sugar for a richer flavor.

For the Cobbler Batter

  • 1 cup All-purpose flour Almond flour can be used for gluten-free options.
  • 1 cup Milk Almond milk or oat milk can be used for dairy-free.
  • ½ cup Unsalted butter, melted Coconut oil or margarine can be used as a dairy-free option.
  • 1 tsp Baking powder Self-rising flour can be used (omit baking powder).
  • 1 tsp Vanilla extract Almond extract can substitute for a different flavor profile.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and slice fresh peaches into thick wedges. Toss them with ½ cup of granulated sugar and let sit for about 10 minutes.

Batter and Assembly

  • In a mixing bowl, combine 1 cup of flour, ½ cup of sugar, and 1 tsp of baking powder. Stir in 1 cup of milk and ½ cup of melted butter until well mixed.
  • Pour the batter into a greased 9x13 inch baking dish. Carefully spoon the peach mixture over the batter without mixing.

Baking

  • Place the dish in the preheated oven and bake for 40-45 minutes until the top is golden brown and bubbly.
  • Allow the cobbler to cool slightly before serving.

Serving

  • Serve warm with a scoop of vanilla ice cream for an indulgent touch.

Notes

Consider adding a sprinkle of nutmeg or a splash of bourbon to the peach mixture for a unique twist. Store leftovers in an airtight container in the fridge for up to three days.
