Ingredients
  

For the Cake
  • 1 box chocolate cake mix
  • 1 cup Coca Cola
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup mini marshmallows
  • 1/2 cup buttermilk
  • 1/2 cup unsweetened cocoa powder
For the Frosting
  • 2 cups powdered sugar
  • 1/2 cup butter to be melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, Coca Cola, vegetable oil, eggs, and buttermilk. Mix until well combined.
  3. Stir in the mini marshmallows.
Baking
  1. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Frosting
  1. While the cake is baking, prepare the chocolate frosting. In a saucepan, melt the butter over medium heat.
  2. Stir in the cocoa powder and milk, and bring to a boil. Remove from heat and whisk in the powdered sugar and vanilla extract.
Finishing Touch
  1. Once the cake is done, remove it from the oven and let it cool for 10 minutes before spreading the chocolate frosting on top.
  2. Allow to cool completely before serving.

Notes

Serve with vanilla ice cream or whipped cream for an extra delightful treat. This cake is also great with fresh strawberries or fruit salad.
