  • 4 large large sweet potatoes, peeled and sliced into 1/2-inch rounds
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 cup orange juice
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 pinch salt

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Arrange the sliced sweet potatoes evenly in a 9×13-inch baking dish.
  3. In a medium saucepan, melt butter over medium heat.
  4. Stir in brown sugar, orange juice, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth and sugar is dissolved.
  5. Pour the syrup mixture evenly over the sweet potatoes, making sure all slices are coated.
  6. Cover the baking dish tightly with aluminum foil and bake for 40 minutes.
  7. Remove the foil and continue baking for an additional 20-25 minutes, or until the sweet potatoes are tender and the syrup has thickened into a glaze.
  8. Let cool for a few minutes before serving.
