  • 8 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil or melted butter Melted butter can enhance richness.
Spice Mixture
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika Optional for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking dish or tray with foil for easy cleanup.
  3. Pat the chicken thighs dry with paper towels.
  4. Rub the thighs with olive oil or melted butter.
  5. In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, thyme, oregano, and smoked paprika.
  6. Generously season the chicken on all sides with the spice mixture.
  7. Place the thighs skin-side up in the prepared baking dish.
Baking
  1. Bake for 35-45 minutes or until the skin is crisp and the internal temperature reaches 165°F (74°C).
  2. For extra crispiness, broil the top for 2-3 minutes if desired.
  3. Let the chicken rest for a few minutes before serving.

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat to an internal temperature of 165°F (74°C).
