Ingredients

For the Cookie Dough

  • 8 tablespoons salted butter Use room temperature for better creaminess.
  • 1/2 cup white sugar Raw cane sugar works great.
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg Ensure it's at room temperature.
  • 1 1/2 cups all-purpose flour Approximately 6.75 ounces.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt Add a bit extra if you like.
  • 3/4 cup chocolate chips A mix of chips and chunks is ideal.

Instructions

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Microwave the butter for about 40 seconds until it's just melted but not hot.
  • In a bowl, using a stand mixer or electric beaters, beat the melted butter with the white and brown sugars until creamy.
  • Add the vanilla extract and egg, then beat on low speed until everything is mixed, about 10 to 15 seconds.

Making the Dough

  • Add the flour, baking soda, and salt. Mix until crumbles form and use your hands to bring it together into a dough.
  • Fold in the chocolate chips with your hands until evenly distributed.

Baking

  • Roll the dough into 12 large balls (or 9 for bigger cookies) and place them on a cookie sheet.
  • Bake for 9-11 minutes until the cookies look puffy, dry, and just barely golden. Do not overbake!
  • Let the cookies cool on the pan for about 30 minutes to become soft and delicious.

Notes

Store cookies in an airtight container at room temperature to keep them soft. You can freeze them for longer storage, placing them in a freezer-safe bag.
