  • 1 tablespoon brown sugar Can substitute with a mix of white sugar and molasses.
  • 1 egg yolk egg yolk Use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) for vegan.

  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon baking soda
  • a pinch salt

Optional Add-ins

  • a handful chocolate chips Add for extra sweetness.

Instructions

Preparation

  • In a microwave-safe mug, combine melted unsalted butter, granulated sugar, and brown sugar. Mix until smooth.
  • Add the egg yolk and vanilla extract, stirring well to combine.
  • In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Add this dry mixture to the wet ingredients and stir until just combined; do not overmix.
  • If desired, fold in chocolate chips.

Cooking

  • Microwave the cookie on high for 40-60 seconds, monitoring carefully. The cookie should look set but slightly underbaked in the center to maintain a chewy texture.
  • Allow the mug cookie to cool for about 1 minute before enjoying with a spoon.

Notes

For best results, avoid overcooking to keep the center chewy. Experiment with toppings like vanilla ice cream, chocolate sauce, or sea salt.
