Ingredients

For the Cobbler Base
  • 1/2 cup unsalted butter, melted Can be replaced with coconut oil or plant-based butter for a dairy-free version.
  • 1 cup granulated sugar
  • 1 cup milk Almond milk can be used for a dairy-free version.
  • 1 cup all-purpose flour Gluten-free flour can be substituted for gluten sensitivities.
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon Add more if you prefer a stronger cinnamon flavor.
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. In a large mixing bowl, combine the melted butter and sugar, mixing well until creamy.
  3. Stir in the milk and vanilla extract until incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture, taking care not to overmix; you want it just combined.
  6. Pour the batter into a greased baking dish, spreading it out evenly.
Baking
  1. Bake for 25-30 minutes or until it turns golden brown and a toothpick inserted comes out clean.
  2. Allow the cobbler to cool for a few minutes before serving.

Notes

Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream. You can also sprinkle some extra cinnamon on top for added flavor. Store leftovers in an airtight container in the fridge for up to three days or freeze for longer storage. Reheat in the microwave for 20-30 seconds.
