Ingredients
  

For the bread

  • 3 pieces ripe bananas, mashed Use very ripe bananas for the best flavor and moisture.
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

For the topping

  • 2 tbsp granulated sugar
  • 1/2 tsp cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, whisk together the mashed bananas, melted butter, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  • In a separate bowl, mix the all-purpose flour, baking soda, salt, and ground cinnamon.
  • Gradually add the dry ingredients into the wet mixture, stirring just until everything is combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • In a small bowl, mix 2 tablespoons of sugar and 1/2 teaspoon of cinnamon for the topping. Sprinkle it evenly over the batter.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let it cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

You can serve this bread warm or at room temperature. It's delicious on its own or with a spread of butter or cream cheese. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Use very ripe bananas for the best flavor. Don't overmix the batter; stir until just combined for a light and fluffy loaf.
