For the Sauce

  • 1 can Crushed tomatoes Use good quality; fresh tomatoes can be substituted.
  • 1 cup Stock (chicken or vegetable) Provides depth to the sauce.
  • 1/2 cup Cream (optional) For added richness.

Instructions

Preparation

  • In a large bowl, mix together ground meat, breadcrumbs, garlic, chopped herbs, and beaten egg. Season with salt and pepper.
  • Form the mixture into small balls (about the size of a golf ball) and place them on a baking sheet.

Cooking

  • In a large skillet, heat olive oil over medium heat. Brown the meatballs on all sides, then remove them from the skillet.
  • In the same skillet, add crushed tomatoes and stock, scrapping up any bits left behind. This enhances the sauce flavor.
  • Return the meatballs to the skillet, cover, and cook on low heat for about 30 minutes.
  • If using cream, stir it in during the last 5 minutes of cooking.

Serving

  • Serve over pasta, rice, or toasted bread, garnished with fresh herbs and grated parmesan if desired.

Notes

Ensure to let the meatballs rest a few minutes after cooking for better flavor development. Can be made ahead and frozen for later.
