For the Cookie Dough

  • 1 cup unsalted butter (softened) Make sure it's at room temperature.
  • 3/4 cup brown sugar (packed) Can substitute with granulated sugar.
  • 1/2 cup granulated sugar Used in combination with brown sugar.
  • 2 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup crushed graham crackers
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup semi-sweet chocolate chips
  • 1 cup Oreo cookies (roughly chopped) Adds a fun twist.
  • 1/2 cup marshmallow fluff Can substitute with mini marshmallows.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, crushed graham crackers, baking soda, and salt. Gradually mix this into the wet ingredients.
  • Fold in the chocolate chips, chopped Oreos, and marshmallow fluff until evenly distributed.
  • Drop heaping portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until golden brown at the edges but still soft in the center.
  • Allow to cool on the sheet for about 5 minutes before transferring to a wire rack.

Notes

For chewier cookies, err on the side of underbaking. Consider chilling the dough for 30 minutes before baking to enhance flavor and texture.
