S'mores Cookies
S'mores Cookies are a delightful treat that combines the classic flavors of s'mores with chewy cookies, featuring melted chocolate, gooey marshmallows, and crunchy graham crackers.
Ingredients
For the Cookie Dough
- 1 1/3 cups salted butter, softened Make sure butter is softened for easier mixing.
- 1 cup white sugar
- 1 cup light brown sugar
- 3 large eggs Add one at a time.
- 2 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3 1/2 cups semi-sweet chocolate chips Adjust amount for extra chocolate flavor.
For Topping
- 6 large marshmallows, cut in half Can substitute with mini marshmallows.
- 3 full-size graham crackers, broken into smaller pieces Can substitute with shortbread cookies.
- 2 (1.55-ounce) Hershey’s milk chocolate bars, broken into pieces
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, white sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking soda, and salt; gradually blend into the creamed mixture.
- Fold in the chocolate chips.
Baking
- Drop spoonfuls of dough onto ungreased cookie sheets.
- Top each cookie with a piece of graham cracker, chocolate, and half a marshmallow.
- Bake for 10-12 minutes in the preheated oven until the edges are lightly browned.
- Let cool before removing from the cookie sheets.
Notes
Store cookies in an airtight container at room temperature. Best enjoyed within a few days, but can last up to a week. Freeze for up to three months for longer storage. Adjust baking time to ensure cookies are soft in the center.
