S'mores Cookies

S'mores Cookies are a delightful treat that combines the classic flavors of s'mores with chewy cookies, featuring melted chocolate, gooey marshmallows, and crunchy graham crackers.

Ingredients
  

For the Cookie Dough

  • 1 1/3 cups salted butter, softened Make sure butter is softened for easier mixing.
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 3 eggs Add one at a time.
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3 1/2 cups semi-sweet chocolate chips Adjust amount for extra chocolate flavor.

For Topping

  • 6 large marshmallows, cut in half Can substitute with mini marshmallows.
  • 3 full-size graham crackers, broken into smaller pieces Can substitute with shortbread cookies.
  • 2 (1.55-ounce) Hershey’s milk chocolate bars, broken into pieces

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, white sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Combine the flour, baking soda, and salt; gradually blend into the creamed mixture.
  • Fold in the chocolate chips.

Baking

  • Drop spoonfuls of dough onto ungreased cookie sheets.
  • Top each cookie with a piece of graham cracker, chocolate, and half a marshmallow.
  • Bake for 10-12 minutes in the preheated oven until the edges are lightly browned.
  • Let cool before removing from the cookie sheets.

Notes

Store cookies in an airtight container at room temperature. Best enjoyed within a few days, but can last up to a week. Freeze for up to three months for longer storage. Adjust baking time to ensure cookies are soft in the center.
