Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
For the filling
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips Feel free to swap for dark chocolate or peanut butter chips
  • 1 cup miniature marshmallows

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press this mixture into the bottom of the prepared baking dish.
  3. In a separate bowl, cream together the brown sugar, granulated sugar, and remaining melted butter until smooth.
  4. Beat in the egg and vanilla extract, mixing until fully incorporated.
  5. Stir in the flour, baking powder, and salt until just combined. Gently fold in the chocolate chips and marshmallows.
  6. Pour the batter over the graham cracker crust, spreading it evenly.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
  2. Let the bars cool before cutting them into squares.

Notes

Enjoy these bars warm with a scoop of vanilla ice cream or drizzled with chocolate syrup. Store leftovers in an airtight container at room temperature for up to a week, or freeze for up to three months. For a fun twist, add sprinkles before baking.
