Ingredients
  

Cheese Ingredients

  • 8 oz cream cheese (softened)
  • 2.5 cups shredded cheddar cheese 1 cup reserved for later
  • 3/4 cup shredded mozzarella cheese

Spices and Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp freshly ground black pepper

Liquid Ingredients

  • 1 12 oz can lager-style beer

Preparation

  • Add all ingredients to a large 10-12 inch cast iron skillet, except for the reserved cup of cheddar cheese.
  • Stir everything together until well combined.

Cooking

  • Smoke the mixture at 250° for 1 1/2 - 2 hours.
  • Once done, carefully remove the skillet from the smoker and stir until evenly mixed.
  • Add the remaining cheddar cheese and stir until it melts into a smooth, creamy dip.

Serving

  • Serve warm with hard or soft pretzels for dipping.

Notes

For a richer taste, use a stout beer. Ensure cheeses are at room temperature for easier melting. Experiment with wood chips that complement the beer flavor. For a spicy kick, add jalapeños or hot sauce before smoking. Stir occasionally to prevent burning.
