  • 1 packet Ranch salad dressing Can be adjusted or substituted for a homemade version.
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder Adjust for desired spiciness.

Final Touch

  • 4 ounces Cream cheese Added for creaminess before serving.

Preparation

  • In a slow cooker, combine the chicken breasts, diced onion, frozen corn, red beans, diced tomatoes, and chicken broth.
  • Add in the ranch salad dressing, cumin, and chili powder. Stir until well combined.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, shred the chicken in the slow cooker and add the cream cheese. Stir until melted and combined.

Notes

Serve warm with toppings like shredded cheese, sour cream, or chopped cilantro. Perfect with crusty bread or tortilla chips. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
