  • 1 pound ground beef or turkey Use lean ground turkey for a healthier option.
  • 1 large onion, chopped
  • 2 large carrots, sliced Feel free to swap out with seasonal vegetables.
  • 2 medium potatoes, diced For thicker stew, mash some potatoes before serving.
  • 1 can diced tomatoes (14.5 oz)
  • 1 can beef broth (15 oz) Use vegetable broth for a vegetarian option.
  • 1 can green beans (14.5 oz), drained
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme Fresh herbs can be used for added flavor.

Method
 

Preparation
  1. In a skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
  2. Transfer the browned meat to the slow cooker.
  3. Add onion, carrots, potatoes, diced tomatoes, beef broth, green beans, garlic powder, thyme, salt, and pepper to the slow cooker.
  4. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 4 hours.
  2. Serve hot with crusty bread or rolls.

Notes

Cool and store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to 3 months.
