  • 2 cups cooked pasta
  • 1 lb boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese

Preparation

  • In a slow cooker, combine chicken, cream of chicken soup, chicken broth, mixed vegetables, onion powder, garlic powder, salt, pepper, and thyme.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  • Shred the chicken in the slow cooker, then stir in the cooked pasta and cheddar cheese.
  • Cook for an additional 10-15 minutes until heated through and cheese is melted.
  • Serve warm.

Notes

For extra flavor, sauté the onions and garlic before adding them to the slow cooker. Use rotisserie chicken for quicker prep. Adjust thickness with more broth if needed. Add fresh herbs before serving and spice it up with red pepper flakes.
