  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion, sliced or 2 small onions
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings see homemade blend below
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)
Spices
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt (or more to taste)
  • 1 1/2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Season the sliced chicken breasts evenly with salt and pepper to enhance flavor before cooking.
  2. Add the seasoned chicken, sliced bell peppers, onions, diced tomatoes or salsa, and fajita seasoning into the slow cooker.
  3. Stir everything together thoroughly to combine all ingredients well.
Cooking
  1. Set the slow cooker to HIGH heat for 2–3 hours or LOW heat for 4–6 hours, allowing the flavors to meld and the chicken to cook through until tender.
  2. Turn the Instant Pot to the sauté setting and heat the oil.
  3. Add the sliced onions and bell peppers, cooking for 3–5 minutes or until they become soft and slightly translucent.
  4. Season the chicken with salt and pepper, then add it to the Instant Pot along with chicken broth, diced tomatoes, and fajita seasoning.
  5. Stir everything to combine.
  6. Secure the lid, close the valve, and set the Instant Pot to high pressure for 8 minutes.
  7. Once cooking is complete, perform a quick release of the pressure to avoid overcooking.
Serving
  1. Serve the chicken fajitas hot with warm tortillas, garnished with favorite toppings such as avocado, sour cream, cilantro, or shredded cheese if desired.

Notes

For enhanced flavor, marinate the chicken in fajita seasoning and lemon juice for a few hours before cooking. Use a variety of bell peppers for added color and sweetness. If you desire more heat, add sliced jalapeños or a pinch of cayenne pepper to the mix. Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stovetop until heated through. For longer storage, you can freeze the cooked fajitas in a freezer-safe container for up to three months. Thaw overnight in the fridge before reheating.
