Ingredients
  

Meat and Vegetables

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 cup matchstick carrots Feel free to add more vegetables for extra nutrition.
  • 1 medium red bell pepper, sliced
  • 2-3 pieces scallions, rough chopped Add to the mixture for flavor.
  • 3 cloves garlic, minced

Sauce

  • 1/2 cup low sodium soy sauce Adjust for a sweeter or saltier flavor.
  • 1/2 cup brown sugar Adjust for sweetness.
  • 1 14.5 ounce can chicken stock Can be substituted with vegetable broth for a vegetarian option.

Noodles and Garnish

  • 2 packets ramen noodle packets Discard the flavor packets before adding.
  • to taste sesame seeds for garnish Optional.

Instructions
 

Preparation

  • In a slow cooker, add the ground beef and cook until browned.
  • Add the matchstick carrots, sliced red bell pepper, chopped scallions, and minced garlic.
  • In a separate bowl, mix together the soy sauce, brown sugar, and chicken stock, then pour this mixture over the meat and vegetables in the slow cooker.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • About 30 minutes before serving, add the ramen noodle packets to the slow cooker.
  • Stir well and let cook until the noodles are tender.
  • Serve hot, garnished with sesame seeds if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, add a splash of water or broth to loosen up the noodles.
