  • 1 pound ground beef Try to use lean ground beef for a healthier option.
  • 1 cup matchstick carrots Pre-packaged matchstick carrots can save time.
  • 1 medium red bell pepper, sliced Can substitute with other bell pepper colors.
  • 2-3 pieces scallions, rough chopped Use green parts for garnish.
  • 3 cloves garlic, minced Fresh garlic is recommended for better flavor.
  • 1/2 cup low sodium soy sauce Use low sodium to control salt content.
  • 1/2 cup brown sugar Adjust sweetness to taste.
  • 1 can (14.5 ounces) chicken stock Homemade stock can enhance the flavor.
  • 2 packets ramen noodles Discard seasoning packets.
  • to taste tablespoons sesame seeds for garnish Optional but adds great texture.

Instructions
 

Preparation

  • In a slow cooker, add the ground beef and cook until browned.
  • Add matchstick carrots, sliced bell pepper, chopped scallions, and minced garlic to the slow cooker.
  • Pour in the soy sauce, brown sugar, and chicken stock.
  • Stir to combine all ingredients.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the ramen noodle packets (discard the seasoning packets).
  • Stir occasionally until the noodles are cooked.

Serving

  • Serve hot, garnished with sesame seeds if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove or in the microwave. For added flavor, consider adding ginger or chili flakes. Ensure the beef is well browned for richer flavor.
