Main Ingredients

  • ½ banana ½ ripe banana (mashed) Make sure the banana is ripe for better sweetness.
  • ½ to 1 tbsp ½ to 1 tbsp maple syrup (to taste) Adjust sweetness based on preference.
  • 1 ½ tsp 1 ½ tsp peanut butter Use for dough.
  • 2 tbsp 2 tbsp protein powder (I recommend chocolate flavor) Can use different flavors as preferred.
  • 1 ½ tbsp 1 ½ tbsp oat flour (or almond flour) Oat flour works best, almond flour can be a substitute.
  • 1 tbsp 1 tbsp cocoa powder
  • tsp ⅓ tsp baking powder
  • 1 to 2 tsp 1 to 2 tsp milk of choice (if necessary) Add only if dough is too thick.
  • a pinch salt A pinch of salt
  • Chocolate chips (optional for topping) Use as desired.
  • 1 tsp 1 tsp peanut butter (for filling) For filling the cookies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a bowl, mash the ½ ripe banana, then combine it with the peanut butter and maple syrup. Stir until it’s smooth.
  • Add the protein powder, oat flour, cocoa powder, baking powder, and a pinch of salt.
  • Start mixing with a fork, then use your hands to knead the dough until it’s smooth. If the dough is too thick, add 1 to 2 teaspoons of nondairy milk and keep kneading until it’s smooth.
  • Divide the dough into 2 parts and roll each part into round discs about 0.2 inches (0.50 cm) thick.
  • Place 1 teaspoon of peanut butter in the center of one disc, then cover it with the second piece of dough. Gently press down the edges to seal the cookie.
  • Place the cookies on a baking sheet covered with parchment paper and bake in the hot oven for 10 to 12 minutes.
  • Let the cookies cool for at least 10 minutes before serving.

Notes

These cookies are best enjoyed warm. You can also top them with extra chocolate chips or a drizzle of maple syrup for added sweetness! Store leftovers in an airtight container for up to 2 days at room temperature or up to a week in the refrigerator.
