  • 1/3 cup pumpkin, canned
  • 1/2 cup oats Use rolled oats for best texture.
  • 1/3 cup almond milk Can substitute with any milk of choice.
  • 1 tsp baking powder
  • 1-2 tbsp maple syrup Adjust according to desired sweetness.
  • 1 tbsp chocolate chips Add more for extra chocolate flavor.
  • 1/2 tsp vanilla extract
  • cinnamon To taste.
  • pumpkin pie spice To taste.

Instructions
 

Preparation

  • Set the oven to 400 degrees.
  • Combine the pumpkin, almond milk, maple syrup, and vanilla extract until smooth.
  • Add in the oats and baking powder. Combine. If needed, add an extra splash of almond milk!
  • Next, add pumpkin pie spice and cinnamon to your liking.
  • Stir in the chocolate chips.
  • Pour the oatmeal mixture into a small baking dish or oven-safe bowl.
  • Top with more chocolate chips and an extra sprinkle of cinnamon.
  • Bake for 20 minutes.
  • Let cool and top with peanut butter & honey for ultimate deliciousness! Enjoy!

Notes

Great served with Greek yogurt or nuts for added crunch. Store leftovers in an airtight container for up to three days. Reheat with almond milk if needed. You can freeze the mixture before baking it.
