Preparation
  1. Start by heating your pot on medium heat.
  2. Rub the beef with kosher salt, making sure it’s well-coated on all sides.
  3. Add the fresh herbs and peppercorns.
  4. Place the seasoned beef into the pot and add water until the beef is covered.
  5. Cover the pot with a lid and bring the water to a simmer.
  6. Simmer the beef for about 2-3 hours, or until tender. You may need to add more water if it evaporates.
  7. Once cooked, remove the beef from the pot and let it rest for a few minutes before slicing.
  8. Slice the beef against the grain and serve it with your favorite sides.

Notes

Serve Simple Salt Beef with mashed potatoes or roasted vegetables for a comforting meal. Let it cool before storing in an airtight container; it lasts up to four days in the refrigerator. For longer storage, freeze in slices with wax paper in between.
