- Start by heating your pot on medium heat.
- Rub the beef with kosher salt, making sure it’s well-coated on all sides.
- Add the fresh herbs and peppercorns.
- Place the seasoned beef into the pot and add water until the beef is covered.
- Cover the pot with a lid and bring the water to a simmer.
- Simmer the beef for about 2-3 hours, or until tender. You may need to add more water if it evaporates.
- Once cooked, remove the beef from the pot and let it rest for a few minutes before slicing.
- Slice the beef against the grain and serve it with your favorite sides.
Notes
Serve Simple Salt Beef with mashed potatoes or roasted vegetables for a comforting meal. Let it cool before storing in an airtight container; it lasts up to four days in the refrigerator. For longer storage, freeze in slices with wax paper in between.
