  • 1 can Coconut milk (400ml) Creates the velvety, creamy base.
  • 2 cloves Garlic, minced For aromatic depth.
  • 1 medium Onion, diced Forms the flavor foundation.
  • 2 cups Vegetable broth Lightens and extends the coconut base.
  • 1 lime Juice of 1 lime Added at the end for brightness.
  • 1 handful Cilantro, chopped For a fresh herbal finish.
  • 1 tsp Curry powder For warmth and balance.
  • 1/2 tsp Turmeric For warmth and balance.
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper For warmth and balance.

Method
 

Preparation
  1. Warm a saucepan over medium heat. Add a splash of oil.
  2. Sauté onion and garlic until soft.
  3. Stir in curry powder, turmeric, salt, and pepper.
  4. Pour in vegetable broth and coconut milk, stirring to combine.
  5. Add beans and bring the soup to a gentle simmer.
  6. Simmer for 10 to 12 minutes until flavors meld and broth thickens slightly.
  7. Turn off heat, add lime juice and chopped cilantro.
  8. Ladle into bowls and serve warm with bread or rice.

Notes

Serve with warm crusty bread or fluffy rice. Can be paired with a green salad for added freshness. For extra flavor, consider adding yogurt or chili flakes.
