  • 2 cups all-purpose flour
  • ½ cup softened butter Make sure the butter is at room temperature.
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 cup mixed dried fruit (e.g., raisins, sultanas, currants) Feel free to customize the dried fruits.
  • ½ cup marzipan (cut into chunks or rolled into a log) Add as a layer in the loaf.
  • ½ cup milk
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 teaspoons baking powder

Preparation and Baking
  1. Preheat the oven to 350°F (175°C) and line a 95-inch loaf pan with parchment paper.
  2. Cream together the butter and brown sugar in a large bowl.
  3. Beat in the eggs and stir in the milk.
  4. Add flour, baking powder, cinnamon, and nutmeg. Mix until just combined.
  5. Fold in the dried fruit.
  6. Pour half the batter into the loaf pan, add a layer of marzipan, and then top with the remaining batter, smoothing the top.
  7. Bake for 50-55 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Optional: Dust with powdered sugar before serving.

Notes

Store the loaf in an airtight container in the refrigerator for up to one week or slice and freeze for up to three months. To reheat, pop slices in the toaster or microwave until warmed through.
