Ingredients
  

Dry Ingredients
  • 2 cups Self-Raising Flour
  • ½ cup Caster Sugar
  • 1 teaspoon Ground Mixed Spice
  • 1 cup Dried Mixed Fruit
  • ½ cup Glacé Cherries, halved
Wet Ingredients
  • 100 g Marzipan, cubed
  • 2 Large Eggs
  • ½ cup Milk
  • cup Sunflower Oil
  • 1 teaspoon Vanilla Extract
  • Grated Zest from 1 Orange Grated Zest from 1 Orange

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and line a 12-hole muffin tin with paper liners.
  2. In a large bowl, mix the self-raising flour, caster sugar, and ground mixed spice.
  3. Add in the dried mixed fruit, glacé cherries, and marzipan cubes, stirring to combine.
  4. In a separate bowl, whisk together the eggs, milk, sunflower oil, vanilla extract, and grated orange zest.
  5. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
Baking
  1. Divide the batter into the prepared muffin liners, filling each about ¾ full. Optionally, press a small disc of marzipan on top of each muffin.
  2. Bake for 20–25 minutes until golden and a skewer comes out clean.
  3. Allow to cool on a wire rack and dust with powdered sugar or drizzle with icing before serving.

Notes

Serve Simnel Muffins with a cup of tea or coffee, and consider pairing them with clotted cream or fresh fruit salad. Keep muffins fresh by storing them in an airtight container at room temperature for up to three days, or freeze for up to three months.
