  • 2 cups Mango chunks Use fresh mango for the best flavor.
  • 1 cup Cooked shrimp If using frozen shrimp, make sure to thaw.
  • 1 cup Cherry tomatoes Slice in halves.
  • 1 cob Corn on the cob, sliced Boil or grill until tender.
  • 2 tablespoons Chopped parsley For garnish.

Preparation

  • Boil or grill the corn until tender.
  • If your shrimp is not precooked, cook it with olive oil, salt, and pepper.
  • Slice the cherry tomatoes in halves.

Assembly

  • Assemble the mango chunks, shrimp, cherry tomatoes, and corn in a bowl.
  • Garnish with parsley and enjoy!

Notes

Serve the bowl warm or chilled. Add a lime wedge on the side for an extra zing. Leftovers can be stored in an airtight container in the refrigerator but keep ingredients separate for freshness. Feel free to add jalapeƱos for a bit of heat.
