Ingredients
  

Pasta and Shrimp

  • 340 grams fettuccine or penne pasta
  • 450 grams large shrimp, peeled and deveined Use high-quality shrimp for the best flavor.

Sauce and Seasonings

  • 1 tablespoon neutral cooking oil
  • 1 small onion, finely chopped
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use freshly grated for better flavor.
  • Salt and pepper to taste
  • Parsley for garnish

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the cooking oil over medium heat. Add the chopped onion and sauté until translucent.

Cooking

  • Add the butter and shrimp to the skillet. Cook until the shrimp turn pink and are cooked through, about 2-3 minutes.
  • Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce.
  • Garnish with chopped parsley and serve immediately.

Notes

Serves well with a side of garlic bread and a garden salad. Leftovers can be stored for up to 3 days in an airtight container. Reheat gently with a splash of cream to regain creaminess.
