Sauce Preparation

  • In a separate bowl, mix together the pineapple juice, diced pineapple, soy sauce, brown sugar, minced garlic, ground ginger, and black pepper. Stir well until the sugar is dissolved.
  • Pour the pineapple mixture over the chicken in the crockpot, ensuring all pieces are well coated in the sauce.

To store leftovers, let the chicken cool and then place it in an airtight container. It will keep well in the fridge for up to 3-4 days. You can also freeze it for longer storage; just make sure to label your container with the date. For a little extra heat, add red pepper flakes to the sauce. Feel free to throw in sliced bell peppers for added texture and flavor. Serve with chopped fresh cilantro or parsley on top for a pop of color and freshness.
