  • 5 cups potatoes O'Brien
  • 1 tablespoon butter for cooking
  • 1 pound mild sausage
  • 3 pieces green onions, chopped
  • 32 ounces Egg Beaters Original
  • 3/4 cup milk
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 10 ounces diced tomatoes and green chilies
  • 2 cups shredded cheddar and Monterey Jack cheese blend

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, melt the butter and brown the sausage over medium heat.
  • In a large mixing bowl, combine the potatoes O'Brien, Egg Beaters, milk, salt, pepper, garlic powder, onion powder, and the diced tomatoes and chilies.
  • Stir in half of the cheese and the cooked sausage. Mix well.
  • Pour the mixture into a greased baking dish.
  • Sprinkle the remaining cheese on top.

Baking

  • Bake for 45-50 minutes or until the casserole is set and the cheese is bubbly.

Notes

Serve warm with fresh fruit or a side salad. Top with sour cream or salsa for added flavor. Can be prepared ahead of time and baked when ready.
