Main Ingredients

  • 5 cups potatoes O'Brien
  • 1 tablespoon butter for greasing the pan
  • 1 pound mild sausage or cooked bacon/turkey sausage for variation
  • 3 pieces green onions, chopped
  • 32 ounces Egg Beaters Original
  • 3/4 cup milk
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 10 ounces diced tomatoes and green chilies
  • 2 cups shredded cheddar and Monterey Jack cheese blend or any cheese of your choice

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the sausage until it's browned and cooked through. Break it into small pieces as it cooks.
  • In a greased 9x13 inch baking dish, layer the potatoes O'Brien, cooked sausage, diced green onions, and diced tomatoes with chilies.
  • In a bowl, whisk together the Egg Beaters, milk, salt, pepper, garlic powder, and onion powder. Pour this mixture over the layered ingredients in the baking dish.
  • Top everything with the cheese blend.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until the egg is set and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes

Serve hot with fresh fruit or toast. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Can reheat individual portions in the microwave or oven.
